- 1 lb ground beef or ground turkey
- 1 tbsp olive oil
- 3 cups sliced bell pepper (into chip sizes)
- 1 cup onion, chopped
- 1⁄4 cup salsa
- 1⁄4 cup shredded cheese
Optional toppings: lettuce, greek yogurt, tomatoes, black olives etc.
Heat skillet to medium high heat and add olive oil. Brown the beef and add in chopped onions. Let onions brown as well. When meat is no longer pink, add in salsa and let simmer for 5 minutes. Preheat oven to 350 degrees. Lay out bell pepper slices on pan and put in oven for about five minutes. Take out of oven then cover with meat mixture. Add cheese on top and any other toppings you want heated.Cook for 10 minutes until cheese has melted. Enjoy!
